Beef (necklace, chuck, shoulder ….): 1.5 kg
Few anchovy fillets
Olive oil: 3 tablespoons

Flour
Sherry vinegar

Red wine: 1 bottle

Carrot: 1
Fennel
Celery: 1 stick
