Ingredients of Beef with Orange:

Beef with Orange Recipe
Nuts heel cubed: 1.2 kg
Smoked bacon: 120 g
Red wine: 75 cl
Wine vinegar: 25 cl
Oranges: 3
Tomato paste: 2 c. tablespoons
Carrots: 3
Onions: 4
Cloves: 5
Cloves of garlic: 6
Parsley: 6 sprigs
Rosemary: 2 sprigs
Cinnamon stick: 1
Tarragon: 1 sprig
Olive oil: 6 c. tablespoons
Salt and pepper

Preparation method of Beef with Orange:

The day before, prepare a marinade with red wine, vinegar, carrots, peeled 2 onions, peeled and sliced, rosemary, a drizzle of olive oil, salt and pepper.
Mix well and add the meat cubes.
Let marinate for 24 hours in the fridge.
The same day, cut the bacon into pieces. Peel the onions and slice them remaining. Peel and crush 2 cloves of garlic.
Heat 2 tbsp. tablespoons of oil in a skillet and cook the bacon, onion, and garlic cloves for 10 min with stirring. Then add the tomato paste and cook 10 minutes over low heat. Drain and pat the meat in paper towels.
Spend the Chinese marinade.
Reserve and the rosemary sprigs.
Heat the remaining oil in a pan, put the pieces of meat to return a few minutes.
Then pour the marinade and bring to a boil, let reduce by 1/3.
Meanwhile, collect the zest of oranges and squeeze the juice.
Add the rosemary, the remaining unpeeled garlic cloves, zest and orange juice, cinnamon stick and tarragon.
Lower the heat and simmer very slowly for 3 h.
Serve immediately after cooking with fresh tagliatelle.

Serving:

3-4 people.
