Iced Meringue with Red Fruits

Ingredients of Iced Meringue with Red Fruits:

Iced Vacherin with red fruits Recipe
Meringue disc 18 cm in diameter : 1
Vanilla ice cream : 1 liter
Mixed red berries : 600 g
Liquid cream: 20 cl
Powdered sugar : 100 g
Icing sugar

Preparation of Iced Meringue with Red Fruits:

Remove the ice from the freezer 45 minutes to 1 hour, depending on the ambient temperature, before the meal and let soften slightly without letting it melt.
Sort, wash and hull the fruit gently and allow draining on a cloth.
Whip the cream very cold whipped by incorporating, in the end, half the sugar in rain.
Spread half of the ice disk of meringue.
Above, make a layer with a quarter of the berries.
Cover with the remaining glaze, then with whipped cream.
Sprinkle the top with another quart of berries and place in the freezer.
Mix the rest of the berries with the remaining sugar, strain through a sieve to remove small seeds then refrigerate.
To serve, remove the meringue 10 to 20 minutes in advance, depending on the ambient temperature.
When serving, sprinkle with icing sugar and meringue accompanies the red fruit coulis served separately.
