Egg yolks: 3

Orange juice filtered: 200 g

Caster sugar : 100g

Flour : 20 g

Grand Marnier: 45 g

Preparation of Pastry Cream Orange:

Pour the orange juice into a saucepan and add half the sugar (50 g).
The heat until the sugar is completely dissolved. Cool.
Beat the egg yolks in a bowl with the remaining sugar (50 g) to bleach, then add the flour and mix thoroughly with a spatula.
Add the juice while stirring gently then put the pan on the heat and cook gently, never make it to the boil to thicken (it should get a fairly thick cream).
Add the Grand Marnier if desired s you add the same amount of orange juice.
