Rosemary Chicken Skewers

Ingredients of Rosemary Chicken Skewers:

Rosemary Chicken Skewers Recipe

For the chicken:

Boneless chicken: 1 ½ pounds
Chicken thighs : 4-6
Fresh rosemary : 2tbsp
Black pepper: 1tsp
Olive oil: 2tbsp

For the sauce:

Blackberries: 1 ¾ cup
Apple vinegar: 1tbsp
Red currant jelly: 2tbsp
Salt as required

Cooking Method of Rosemary Chicken Skewers:

Chicken cut into equal pieces and place into a bowl.. Mix with the, oil, rosemary, and pepper. Cover and set aside to marinate in the refrigerator for an hour.
Remove the chicken pieces from the mixture, reserving the marinade. Thread the chicken onto skewers and season with salt.
Grill- Preheat the grill on a high heat. Brush the grill grates with olive oil. Place chicken skewers on grill and cook for 8 to 10 minutes, 4 to 5 minutes each side. Place on a plate and cover with foil to allow the chicken to rest.
Return the juice and marinade mixture to the pan. Add the vinegar, jelly, and nutmeg and bring to a boil. Simmer, uncovered until it has reduced by about 1/3 to a light syrup-like consistency.
Plate the skewers and sprinkle the sauce over the chicken.
